Grapes have become the new agricultural product for Iowa and particularly for South central Iowa. The quality of the production of grapes is staggering, there clarity and taste are fabulous. Grapes developed for the cold winters dormant period that produce juicy grapes for wine have become a prevalent product for the wineries in Iowa.
Taking a tour of one of the wineries will be the beginning of a wonderful experience for you. Extending to some 31,500 square kilometers, the Burgundy wine growing region is an area which is rich in world and winemaking history and this 360 kilometer strip of land runs from the south of Dijon to Rhoône and produces approximately 180 million bottles of wine annually. Burgundy’s wines include some of the finest red wines such as Corton and Pommard as well as a number of world-class white wines such as Chablis or Chassagne Montrachet.

The Graves area, which lies to the west of the Garonne River, is named for the pebbles found in the soil of this area which allows for excellent drainage and produces very healthy vines. The Graves area produces a lovely garnet-colored red wine with a mix of Merlot and Cabernet grapes and dry white wines based mainly on the Semillon grape with some Sauvignon Blanc blended in.

The Loire region is one of the most beautiful areas of France. A narrow, but long stretch of land following the course of the Loire river, the Loire valley runs from the Massif Central mountains in the middle of France to the Atlantic ocean.
Approximately seventy-five percent of the wine produced in the Loire Valley is white wine, including the well known Muscadet, but the area also produces some extremely good Rosés and red wines.

This shows how easily wines the flavor of world-famous liqueurs and other commercial products may be made with the minimum of utensils and labor; indeed, this is probably, if not decidedly, the simplest, the least troublesome and the most rewarding of all adventures into wine-making.
In what are known as T’Noirot Extracts we have a readily prepared ingredient and, as will be seen in the recipes, no preparation is needed, the stuff is ready to use.
You might get a decent imported wine or British wine at seven and six a bottle, but you will never be able to buy wines with the flavour of these world-famous liqueurs at any price, and certainly not for three shillings a bottle all they will cost you to make. Nor will you ever buy Vermouth at less than fifteen shillings a bottle; the Vermouth recipe alone, then, must be worth a fortune to anybody who likes Vermouth.

The Alsace region in northeastern France is an area of land 50 km wide and 190 km long running along the border with Germany that has been making wine since the Romans first occupied the area in 12 B.C. The capital of the region is Strasburg, home to the Council of Europe and the European Court of Human Rights, which lies on the banks of the Rhine and is often thought to be a German city.

Many of the following root-wine recipes, and certain of the special recipes, call for the addition of wheat or raisins. When these are bought they are usually a little dirty and contain harmful bacteria. They should be washed in cold water, and then immersed - in a muslin or cloth bag - in boiling water for about a minute before using.
The first two recipes here, one for parsnip and another for potato wine, are recommended to the beginner. They clear very quickly, but they lack to some extent the fuller flavor and bouquet of the wines made under the recipes calling for rather more and interesting ingredients.
Simple Parsnip Wine
2½ lb. parsnips • ½ lb. raisins • ½ lb. sultanas
4 lb. sugar • 2 oranges • 2 lemons
1 oz. yeast • 5 quarts water
Scrub and grate the parsnips and put them in the water, bring just to boiling-point and simmer for five minutes. Strain and add the sugar at once and stir until all is dissolved. Then add the cut-up dried fruit and squeeze in the juice of the lemons and oranges. Allow to cool and then sprinkle the yeast on top and stir in. After fourteen days’ fermentation, strain and proceed with isinglass and bottling.

Fresh Fruit Wines
There is no need for me to mention the enormous popularity this branch of home wine-making enjoys, or that countless thousands of people all over the world embark with tremendous enthusiasm each summer upon turning wild fruits and surplus garden fruits into wines fit to grace the tables of a banqueting hall. Just let me say that, no matter how advanced methods become and how easily obtainable special ingredients for wine making are, there will always be in the hearts of everyone a place for the true country wines, for they have that indefinable ’something’ which sets them apart from all others, a uniqueness that cannot be found in any other wine either commercial or home produced.
The methods I use myself are described here, and although they are the simplest and the surest ever evolved, it is necessary to point out the complications that arise if these methods are not used.
Years ago and, I am very sorry to say, even today many thousands of unfortunate home wine makers are following methods which advocate: ‘crush the fruits, add the water and leave to ferment’. Other methods advise boiling the fruits. In both cases disappointment is almost a certainty, and the reason for this is easy enough to understand.
